Recipe Swap: Honey Lime Grilled Chicken

This week I participated in A Taste of Home Cooking’s recipe swap!

Recipe swaps are awesome. It’s a great way to be pretty much forced to try a recipe you may or may not give a chance on your own. Not only am I forced to try something new but I also have to blog it! I love deadlines (really) and I can definitely say I will be participating in more recipe swaps.

This week’s theme was chicken. I swapped my Honey Baked Chicken and received Honey Lime Grilled Chicken from Christine’s Kitchen Chronicles!

I’ll be honest… I was worried when I got this recipe. Since I’m new to the culinary world it’s difficult for me to imagine how flavors go together. In my head, honey and lime don’t go together. Peanut butter and jelly? Yes. Chocolate and peanut butter? Yes. Cookies and Milk? Yes. But, honey and lime? No.

Or so I thought…

This recipe was outstanding. The marinade made the chicken so moist and tender; the flavoring was different and delicious!

Also, this was the first time I’ve marinaded anything and I really enjoyed it. Marinades are so easy and have a nice effect on the meat. LOVE it!

I’ll stop blathering and give you the recipe already…

Ingredients:


6 Tbsp reduced-sodium soy sauce
3 Tbsp honey
Juice of 2 limes (~4 Tbsp lime juice)
3 Tbsp orange juice
1 tsp salt (Omit if using regular sodium soy sauce)
2 tsp freshly ground black pepper
1-1/2 Tbsp fresh ginger, minced (I didn’t use b/c didn’t have)
3 cloves garlic, minced
1 tsp sesame seeds (I didn’t use b/c didn’t have)
2 lbs boneless, skinless chicken breasts

Directions:

1. 12-24 hours prior to cooking, mix all ingredients together in a bowl or large ziplock bag.  Then place into the refrigerator.

2. 1 hour prior to cooking remove chicken from marinade set aside.
3. Heat grill and cook chicken from about 5-8 minutes on each side.
4. Let the chicken rest for 5 minutes then slice and serve.
Like I said before, this was a seriously tasty and easy recipe. I loved the marinade and Max likes to grill so we marked this recipe a “keeper”.

    I would not have thought of honey and lime as a combo, but now that I read the recipe, it makes absolute sense and looks like a top notch easy way to grill next time chicken is fofr dinner.
